Belgian Liège Waffles are one of life's greatest culinary indulgences. Liège Waffles were created by an 18th-century chef for the prince-bishop of Liège. While its recipe was not confirmed until 1921, Liège waffles have always been traditionally made with Belgian pearl sugar.

Tienen is known as the center of sugar production in Belgium, it is located in the province of Flemish Brabant, in Flanders, one of the three regions of Belgium. The pearl sugar is made from locally grown beet sugar.

Belgian pearl sugar has a high melting point, making the sugar fairly heat-resistant. The smaller pearl sugar tends to melt and fully caramelize more quickly, simply due to its smaller size. If you prefer residual pockets of unmelted crunchy pearl sugar inside your waffles, the medium size is the way to go. While traditional Liège waffles are baked with the small size pearl sugar and served fully caramelized in Belgium, you'll have to try both to see which style you. prefer.
