Dal makhani or maa di dal (Whole Black Lentils), as it is popularly known in the punjab, with its smooth velvety texture and lovely flavour is a delicacy that is very much a dish of the punjab. Every punjabi restaurant, roadside eating place and food stall vendor makes the claim that this is a delicacy that they alone can make to perfection. This my own tested recipe dare i claim it as the best?
dal makhani is traditionally cooked on a low flame overnight and allowed to thicken. Using a pressure cooker helps cook the dal in a jiffy. Serve hot with naans.

Cooking Time: 40 mins
Makes 4 servings

Method:

Clean and wash 125 gm Urad Sabut or Whole Black Lentils and 25 gm of rajma. Soak lentils and rajma i.e. kidney beans over night. Add 8 cups (1200 ml) of water and pressure cook dal and rajma with 1 tsp salt. After one whistle, keep on low flame for 40-45 minutes. Remove from stove or fire and when the pressure drops, slight mash hot dal and keep aside. Heat 3 tbsp ghee or oil in a pan, add 1/2 tbsp ginger garlic paste and fry till golden brown. Add 5 tbsp tomato paste, 3 tsp of our masala organic powder and cook until oil separates. Add entire boil dal and simmer for 10 minutes, stirring occasionally. Add 2tbsp fresh cream and 2 tbsp white butter, mix then well and simmer for 5 minutes. Garnish with green coriander leaves and fresh cream, serve hot.
