Premier Cuvée yeast is a high alcohol producing wine yeast. It is fast starting, clean, and has a neutral flavor profile that is recommended for use in red and white wines, and sparkling champagne-type wines. It is also a good selection for mead.
Its recommended fermentation temperature range is 49-95 degrees F (9.5-35 C). It has a potential alcohol producing level of 18% ABV. What that means, the yeast will die when the alcohol solution reaches about 18% in a volume of liquid.
Use 1/2 to a whole packet for one gallon. Each packet can also be used to make up to five gallons in a single container.
Each sealed packet contains 5 grams of freeze dried yeast. If stored in a cool and dry place it should last a year or more. Saccharomyces Bayanus.
