71B-1122 - This yeast can metabolize malic acid turning it into ethanol. Translated, it makes acidic wines, meads, and melomels into more well rounded wines. This gives you a wine without an acid bite, especially if you start off with a wine that has lots of acid in it. Alcohol tolerance: 14%

Each sealed packet contains 5 grams of freeze dried yeast. If stored in a cool and dry place it should last a year or more. Saccharomyces Cerevisiae
