This knife was designed for cutting large cuts of meat, such as turkey, brisket, ham, and so on. The blade has a gentle sweep to it from ricasso to tip, and is approximately .070" at the ricasso and .060" at the tip. Due to the length and thickness of the blade, it has a fair amount of flex to it, allowing you to flex it around bones and maneuver it mid cut. The tip has a sheep's foot design so that it doesn't get stuck in the meat on accident while slicing. In order to make it a great slicer, the blade has a full height, very slight convex grind. The convex nature of the bevels will help prevent meats from sticking to the blade as you slice. The edge is very sharp and the geometry of the overall bevels is such that it is great for it's task of cutting meat. But don't let that fool you. In a pinch it can be used to cut bread, veggies, and whatever else you might have to cut. It is hand forged and finished by myself here in Washington state USA. The blade will be shipped without any type of sheath/cover. If you would like something to protect the blade, that can be arranged. Otherwise, you can just slide it into your knife block at home.
NOTE: This blade is made with 15n20 steel, which is classified as a high carbon steel. High carbon steels are great for making knives, but the only down fall is that they are susceptible to stains and rust. However, a simple coat of mineral oil or vegetable oil will help prevent any stains or rust from occurring. Also, 15n20 has high amounts of nickel in it which further helps prevent corrosion.
