Brought to the states from Germany in the late 1800's, this plant is an amazing addition to any garden. It grows to about 5 feet and the massive flowers bloom for a long time. The colors are vibrant and the shape of the flower is so unique, quite obviously the inspiration behind the name of this plant.
Although this variety is grown more for show than utility, the leaves are nutrient dense and common in Asian cooking. The seeds, which are glossy and black, are cooked, ground into flour or (and this is my favorite thing about amaranth) popped over heat to make miniature popcorn kernals! I add these tiny popped seeds to granola or porridge in the morning for the perfect toasty breakfast.
