Classic tool of choice for the amateur or professional. Very versatile knife for slicing, dicing and chopping. The full flat grind with a slight convex towards the edge allows for a extremely thin edge resulting in a razor sharp edge and aids in food release as well. Perfectly balanced knife. Balance can also be adjusted per customer spec: Blade heavy, balance, or handle heavy.
Available in high carbon 52100 steel, or AEB-L stainless steel. Both steels are great for kitchen cutlery use. Both are relatively easy to sharpen and take a very nice edge. Both are heat treated to approximately 61 Rockwell Hardness.
Multiple handle materials and variations are available. Can be discussed upon purchasing.
A custom hand stitched leather saya is also available to keep the knife the surrounds well protected during storage or travel.
