A curd cutter (also known as a curd harp) is a must have for any home cheese maker. Anyone who has tried cutting cheese curd horizontally can attest that this task is not easy. Achieving neat cube-shaped curds is nearly impossible when cutting at a 45 degree angle.
Consistent horizontal cuts are very important for the final texture of the cheese. That's why we created this cheese curd cutter. It is made out of red oak which has natural antibacterial properties (will not harbor germs). The wood is sealed with food safe finish. Even though the finish is water resistant, it is recommended to sanitize this curd harp with warm water and mild antibacterial soap. Please don't scrub it or put it in the dishwasher. We used fish line for this cheese cutter because it is easier to maintain and replace when necessary than stainless string.
To use the cutter, please insert one leg in the middle of the pot and gently rotate it. We recommend using this cheese cutter after all vertical cuts are made, so you are not attempting to slice through the solid mass of curd horizontally. This will ensure that you can actually slice the curd instead of just moving it around in the pot (we learned this one the hard way).
